Mighty Good Recipe

Tuesdays are dedicated to bringing you a Mighty Good Recipe!

Asian Noodle Soup

3 packets of chicken broth soup mix or 9 cups of prepared chicken broth
2 bunches of bok choy
2 carrots (julienned)
1 package of fresh shiitake mushrooms
1 package of udon noodles
2 TSPN fresh ginger
1 cup tofu (medium firmness)
2 TSPN green onions

Any chicken broth will do…if using a powder packet, follow the directions (my mix called for nine cups of water). Bring broth to a boil. Chop bok choy and mushrooms. Add to boiling water. Dice tofu, julienne the carrots, and mince the ginger. Toss in broth, along with udon noodles. Simmer for 14-15 minutes. Garnish with chopped green onions. Consume.

Guess what? This recipe is actually one of my own. I know…hell is freezing over, but from time to time I do exhibit a small amount of creativity. Note…for vegetarians…I’m sure a vegetable broth would also work well.
